INGREDIENTS

  • 2 tortillas Low Carb Tortillas
  • 1 Jalapeno Pepper
  • 3 tbsps Sweet Red Peppers
  • 2 tbsps chopped Scallions or Spring Onions
  • 1/8 tsp Tabasco Sauce
  • 1/2 tsp Salt
  • 1 tbsp Canola Vegetable Oil
  • 4 large Eggs (Whole)
  • 2 oz Salsa
  • 1/4 tsp Red or Cayenne Pepper
DIRECTIONS
  1. Whisk eggs, salt and cayenne together in a bowl.
  2. In a medium skillet over medium warmth, toast tortillas 1 minute for every side until the point that darker in spots; put aside and cover with thwart to keep warm.
  3. In a similar skillet include oil, red pepper, scallion whites and jalapeno. Cook until the point when vegetables are diminished, around 3 minutes.
  4. Add eggs and keep on cooking, mixing, until the point that eggs are set, around 2 minutes.
  5. Place tortillas on plates. Separation eggs between tortillas, season with hot sauce and tenderly move up.
Serve with salsa and scallion greens.
