Chicken and spiced vegetable tray bake

Ingredients

  • 800g new potatoes, cut into 3cm pieces
  • 6 tomatoes, cut into 3cm pieces
  • 1 large onion, cut into 3cm pieces
  • 1 aubergine, cut into 3cm pieces
  • 1 red pepper, seeds removed, cut into 3cm pieces
  • 2 tbs extra virgin olive oil
  • 2 tbs mustard seeds
  • 4 garlic cloves, sliced
  • 20g ginger, grated
  • 1/4 cup curry leaves
  • 1 small bunch coriander, stalks chopped, leaves picked
  • 1 1/2 tsp ground turmeric
  • 6 large chicken thighs
  • 2 Sliced green chilies
  • Yogurt dressing
  • 140g Greek yoghurt
  • 1 small bunch mint, leaves picked
  • 5g ginger
  • 1 long green chilli, chopped
  • Juice of 1/2 lemon

Instructions

  • Prepare the oven with a heat of 190°C first. Then put the potatoes in a salted water in a saucepan with medium heat. Cook the potatoes for 5 minutes by letting the water boil, then dry the potatoes. Put the potatoes with tomato, red pepper, aubergine, and onion and mix them together. Pour oil in a frying pan and fry this mixture. Add the remaining spices and leaves and stir for 2 minutes then remove and set aside. Bring back the potato mixtures and stir with chicken and roast them for 1 hour. Blend the dressing ingredients and put them on the mixture.
