Ingredients

- 1/2 teaspoon kosher or sea salt.

- 1/2 teaspoon baking soda.

- 1/4 cup non-fat buttermilk.

- 1 1/2 cups grated zucchini.

- 1 teaspoon baking powder.

- 1/2 teaspoon pure vanilla.

- 1/2 teaspoon cinnamon.

- 1 large egg plus 1 egg yolk.

- 2/3 cup melted coconut oil.

- 1 cup coconut sugar. - 1/2 cup walnut pieces. - 1 1/2 cups white whole wheat flour. - 1 teaspoon freshly grated ginger.

Method

  1.  Heat oven to 350 degrees.
  2.  Roast nuts on a baking sheet for 10 minutes. Allow cooling while preparing the batter.
  3.  Whisk together flour, baking powder, salt, baking soda, and cinnamon in a small bowl
  4.  Whisk together buttermilk, eggs, oil, sugar, ginger, and vanilla in a large mixing bowl. Be sure ingredients are well mixed. Add mixed dry ingredients to batter, stir just until incorporated.
  5.  Pour batter into prepared loaf pan and bake for 55-60 minutes, or-or until a fork inserted in the focal point of the roll tells the truth.
  6.  Let cooling 15 minutes in the pan then correctly run a butter knife around the edges, before changing onto a wire rack.
  7.  For two loaves: Double the ingredients and use 3 eggs. Grease and flour two loaf pans.
