Ingredients

1 clove garlic, minced

11/2 pounds cremini mushrooms

1/2 cup diced onion

4 cups low-sodium chicken broth

1 tablespoon olive oil

1/4 cup chopped fresh flat leaf parsley

1/2 teaspoon black pepper

Grated Parmesan for garnish

Instructions

Place a pot over medium heat and add the tablespoon of oil, hot until it shines, when ready add the onion, garlic and let them brown without letting them burn. Add the chicken broth, parsley, mushrooms and seasoning the pepper and salt. Simmer for 15 minutes.
