Egg and Avocado Toast
- 2 eggs
- 2 slices whole grain bread (toasted)
- 1 small avocado
- 1 teaspoon lime juice
- sea salt + black pepper (to taste)
- parsley (optional for topping)
- Mash the avocado with lime juice. Add some salt and pepper and mix. It is optional how to cook eggs and toast but make sure that your toast is multi-grain. You can also scramble the eggs if you wish. Spread your avocado mixture on the toast and then top it with your cooked eggs.
