Healthy Chicken Fried Rice


  • ½ tbsp. coconut oil
  • 4 sliced spring onions
  • 2 chopped garlic cloves
  • 300g skinless chicken breast
  • 1 peeled and diced carrot
  • 5 baby sweetcorn
  • 80g frozen peas
  • 400g pre-cooked rice
  • 1 ½ tbsp. soy sauce
  • 1 tsp sesame oil
  • 1 peeled mango cut in cubes
  • 2 sliced red chilies
  • Small bunch of basil


  • Melt the coconut oil in a large frying pan or wok over a high heat, then chuck in the spring onions and garlic and fry for 30 seconds.
  • Heat the coconut oil until it melts in a pan then put the onions and garlic to fry. Add the chicken and stir fry it. Add the veggies and stir fry all of them. Add the rice along with the other ingredients. Pour some water in the pan to steam things up and cook the ingredients. Continue frying the rice the stop heating while adding the sauces, oils, and mango.  Put then some chili and basil with the serving.
