Middle Eastern Rice Salad Recipe
- 2 tablespoons olive oil
- 1/2 Vidalia or other sweet onion, thinly sliced (about 3/4 cup)
- 1 (16-ounce) can chickpeas, rinsed and drained
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- Freshly ground black pepper
- 3 cups cooked brown rice
- 1/2 cup chopped pitted dates
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
DirectionsFirst, you need to heat two tablespoons of olive oil in a big non-stick pan at medium-high heat. Now add 3/4 cup of onion in the pan and let it cook until onion turn brown. You may stir the onion occasionally to avoid any burning.
After this remove the pan from heat, add one can drained and rinsed chickpeas in it. Along with that add 1/2 teaspoon ground cumin for flavor and salt to taste. Also, you should add some freshly ground black pepper in the pot, and you should stir it to enhance the taste and health of the dish.
