For the Dressing:
    • 1/4 cup apple cider vinegar
    • 1/4 cup fresh strawberries, sliced
    • 1 tablespoon honey
    • 1/4 teaspoon Kosher salt
    • 1/2 cup olive oil
For the Salad:
  • 8 cups baby spinach
  • 1 cup sliced strawberries
  • 1 cup sliced avocado
  • 1/4 cup walnuts, lightly toasted
  • 1/4 cup red onion, sliced thin
  • 1/4 cup low fat blue cheese crumbles (optional)
Directions:

Dressing: First you have to take a food processor and then mix all the ingredients other than olive oil. Blend the mixture well. After the dressing has thickened, add some olive oil.

Salad: After you are done with the dressing, you have to prepare the salad. Take a large mixing bowl and then mix all the ingredients other than blue cheese. Now bring the dressing which you have prepared and add one-fourth of the dressing to the mixture. Divide the salad into 4 large serving bowls. Add some blue cheese to each of the bowls and add some additional dressing if you want.
