Ingredients:

• 1/2 cup cooked then mashed sweet potatoes

• 2 eggs or 1/3 egg beaters

• ¼ cup flour

• 1 teaspoon honey (or coconut palm sugar)

• 1/8 teaspoon baking powder and baking soda (you can use both)

• 1/8 teaspoon ground cinnamon

• Pinch of salt

• Milk-any type-to thin batter if necessary (optional)

Directions

• Mix all the ingredients well to make a batter and ensure the sweet potatoes are well mashed.

• The batter should be thick enough so you can scoop it and spread it on the hot skilled
